The Commis I prepares and serves hot and cold dishes for the assigned kitchen section and supports ordering and stock rotation where needed.
The role calls for initiative, continuous skills development, and completing work to deadlines.
Kitchen duties
- Review production sheets with the relevant senior kitchen team member and prepare food items to standards and service deadlines.
- Follow recipes and specifications; maintain a clean workstation and complete station opening and closing procedures.
- Reduce food waste, rotate and label stock, follow FIFO, and store food items correctly.
- Operate equipment safely and follow food-safety guidelines, hotel safety requirements, and environmental policies.
- Report equipment or food-quality issues, maintain kitchen logbook entries, and follow cleaning schedules and line checks.
- Communicate with kitchen colleagues, brief team members on updates, collect daily data, and report issues.
- Participate in culinary training for junior team members and apply HACCP principles.
Experience and qualifications
- At least 2 years of western kitchen experience.
- Ability to read recipes and good knowledge of cooking.
- Initiative, willingness to improve, and ability to meet deadlines.
- Team-player mentality, flexible approach, strong interpersonal and problem-solving abilities, and practical, operational, and administrative skills.
Workplace
- The kitchen role involves working at the hotel food-preparation station.
