About the Role

  • SLRP Ramen & Rolls Bar is seeking a skilled and passionate Sous Chef with expertise in Japanese cuisine, particularly ramen and sushi, to support the Head Chef in leading kitchen operations.
  • The ideal candidate will have strong culinary knowledge, leadership abilities, and a commitment to delivering exceptional food quality and consistency.

Key Responsibilities

  • Assist the Head Chef in overseeing the daily operations of the kitchen.
  • Prepare and supervise the production of authentic Japanese dishes, with a strong focus on ramen, sushi, sashimi, and related menu items.
  • Ensure all food is prepared and presented according to company recipes and quality standards.
  • Supervise and guide junior chefs, ensuring efficient workflow and high performance.
  • Monitor food quality, portion control, and consistency throughout each service.
  • Ensure compliance with food safety, hygiene, HACCP, and sanitation standards.
  • Assist in inventory management, stock control, ordering, and minimizing food waste.
  • Support menu development, recipe standardization, and seasonal promotions.
  • Coordinate with the front of house team to ensure smooth and timely service.
  • Step in to lead kitchen operations in the absence of the Head Chef.

Requirements

  • Minimum 3–5 years of experience as a Sous Chef or Senior Chef de Partie in a Japanese restaurant.
  • Strong expertise in ramen preparation, broth production, noodle cooking, sushi, sashimi, and Japanese culinary techniques.
  • Experience supervising and training kitchen teams.
  • Good understanding of food costing, inventory management, and kitchen operations.
  • Sound knowledge of HACCP and food safety regulations.
  • Ability to work efficiently under pressure in a fast paced environment.
  • Strong leadership, communication, and organizational skills.
  • UAE hospitality experience is preferred.

Preferred Qualifications

  • Culinary diploma or professional culinary certification.
  • Experience in high volume or casual dining Japanese restaurant concepts.
  • Knowledge of menu engineering and kitchen workflow optimization.
