- Assist the Head Chef in overseeing the daily operations of the kitchen
- Prepare and supervise the production of authentic Japanese dishes, with a strong focus on ramen, sushi, sashimi, and related menu items
- Ensure all food is prepared and presented according to company recipes and quality standards
- Supervise and guide junior chefs, ensuring efficient workflow and high performance
- Monitor food quality, portion control, and consistency throughout each service
- Ensure compliance with food safety, hygiene, HACCP, and sanitation standards
- Assist in inventory management, stock control, ordering, and minimizing food waste
- Support menu development, recipe standardization, and seasonal promotions
- Coordinate with the front of house team to ensure smooth and timely service
- Step in to lead kitchen operations in the absence of the Head Chef
Requirements
- Minimum 3–5 years of experience as a Sous Chef or Senior Chef de Partie in a Japanese restaurant
- Strong expertise in ramen preparation, broth production, noodle cooking, sushi, sashimi, and Japanese culinary techniques
- Experience supervising and training kitchen teams
- Good understanding of food costing, inventory management, and kitchen operations
- Sound knowledge of HACCP and food safety regulations
- Ability to work efficiently under pressure in a fast paced environment
- Strong leadership, communication, and organizational skills
- UAE hospitality experience is preferred
