Naumi Hotel Dubai seeks an experienced, hands-on Head Chef to lead its culinary team and take ownership of hotel culinary operations.
The role combines creativity with operational and commercial awareness to deliver quality food and memorable guest dining experiences.
Key responsibilities
- Lead hotel culinary operations and maintain high standards for food quality, presentation, taste, and hygiene.
- Develop menus with consideration for guest preferences, market trends, operational requirements, and profitability.
- Manage food costs, portion control, wastage, inventory, and kitchen productivity.
- Plan and execute buffet operations, à la carte service, events, functions, and group requirements.
- Ensure compliance with food safety, HACCP, Dubai Municipality, and hotel standards.
- Lead, train, motivate, and develop the culinary team; manage manpower planning, scheduling, and performance.
- Work with F&B, Purchasing, Finance, Sales, and other departments to meet operational and financial objectives.
- Maintain supplier and product relationships, and drive quality, cost efficiency, and continuous improvement.
Candidate requirements
- Proven experience as a Head Chef, Executive Sous Chef, or similar senior culinary leader.
- Strong hotel background; experience in a busy upscale or lifestyle hospitality environment is preferred.
- Strong knowledge of international cuisine, high-volume operations, food costing, inventory management, budgeting, and waste control.
- Strong knowledge of HACCP and UAE food safety requirements.
- Demonstrated leadership and team-development skills, with a creative, commercially minded, hands-on approach.
- Excellent communication and organizational skills; UAE hospitality experience is an advantage.
