About the Role
Manage food and beverage costs, recipes, inventory, and operational variances across restaurant operations.
Key Responsibilities
- Monitor food and beverage costs against sales and budget targets.
- Create, update, and adjust recipes to meet operational standards.
- Calculate recipe and menu-item costs and assess supplier price changes.
- Ensure branches follow approved recipes and portion sizes.
- Analyze actual versus theoretical costs, identify variances, and investigate their causes.
- Monitor inventory, receiving, issuing, stock transfers, and regular stock counts.
- Track waste, stock discrepancies, slow-moving items, and inventory losses.
- Review supplier prices and invoices against approved rates and quantities.
- Prepare regular reports on food cost, variances, waste, and inventory movement.
- Work with kitchen, purchasing, and branch teams to improve cost control.
- Use Foodics to monitor sales, inventory, and cost data; prior experience with the system is preferred.
Requirements
- 5–10 years of experience in the UAE, preferably in F&B.
- Relevant cost-control experience in restaurants or the F&B sector.
- Experience calculating food costs, creating and adjusting recipes, and reviewing recipe costs.
- Good understanding of inventory, stock counts, purchasing, and variance control.
- Proficiency in Excel and report preparation.
- Experience with Foodics is preferred.
- Strong attention to detail, analytical skills, and good communication.
