The Commis I prepares, cooks, and plates high-quality dishes under the guidance of a Demi Chef de Partie or Chef de Partie.
The role follows recipe standards, maintains section organization, and supervises lower-ranking commis chefs to support consistent culinary delivery.
Key responsibilities
- Prepare, cook, and present section dishes according to established recipes, portion sizes, and presentation standards.
- Set up, restock, and maintain mise en place; rotate and label ingredients correctly.
- Guide Commis II, Commis III, and apprentices in daily preparation and culinary techniques.
- Maintain hygiene, sanitation, and safety standards in the workstation, tools, and storage areas.
- Monitor food waste, report low stock, and store leftover ingredients to minimize food costs.
Job requirements
- Degree or diploma in Culinary Arts or Hospitality, or an equivalent professional kitchen certification.
- At least 1–2 years of hands-on commercial-kitchen experience, such as in a 4- or 5-star hotel or high-volume restaurant.
- Strong knife skills, basic knowledge of classic cooking techniques, ability to work under pressure during service rushes, and excellent teamwork skills.
