Job Description

• Prepares weekly rosters of all bars.
• Creates a healthy and fair atmosphere where personnel can work with maximum productivity.
• Fills out requisition forms for necessary F&B items and materials from storerooms.
• Checks all service set-up matters at least half an hour before service starts.
• Attends F&B meetings or other meetings instructed by the Food & Beverage Office.
• Trains staff continuously in behaviour, suggestive selling, service skills and knowledge.
• Ensures operation equipment is cleaned and polished in sufficient amounts.
• Prepares daily log book with details and follows up daily occupancy.
• Checks appearance of service personnel daily and checks beverage temperature, presentation and quantity.
• Handles all administration for the outlet and supervises billing and cash flow including closing checks, discounts and voids.
• Ensures budgeted profit is achieved and implements new service procedures with the Director of Food & Beverage.
• Welcomes guests, allocates tables, deals with guest complaints and handles special requests.

Requirements

• Experience supervising bar or outlet operations in a hospitality setting.
• Ability to train staff in behaviour, suggestive selling, service skills and knowledge.
• Ability to supervise billing and cash flow including closing checks, discounts and voids.
• Ability to ensure bars are clean, tidy and free of hazards at all times.
• Ability to welcome guests, allocate tables and handle complaints and special requests.
• Sales-oriented mindset and leadership in driving outlet revenue.
