Role overview
The Sous Chef supports the Executive Chef with daily kitchen operations, culinary team development, food quality, efficient performance, and food safety, hygiene, and presentation standards.
Responsibilities
- Support daily kitchen operations and smooth service; lead, train, and mentor kitchen staff.
- Maintain food quality, taste, portion control, and presentation; assist with seasonal menus, recipes, and new dishes.
- Plan preparation, production schedules, and workflow; monitor costs, waste, inventory, and stock.
- Ensure food safety, hygiene, sanitation, and HACCP compliance; monitor ingredient freshness, storage, and handling.
- Coordinate kitchen sections for timely service; maintain cleanliness, organization, and equipment.
- Support schedules, duty allocation, performance monitoring, events, banquets, and menu development.
- Ensure recipes, standard procedures, and kitchen policies are followed; assume kitchen responsibility when the Executive Chef is absent.
Qualifications
- Proven Sous Chef or similar experience in a 4-star or 5-star property.
- Experience managing kitchen operations across multiple sections or outlets.
- Background in hotels, resorts, restaurants, or large-scale catering operations.
- Flexibility to work across properties as required.
- A culinary degree or professional culinary certification is preferred.
