Job Purpose

The Restaurant Manager is responsible for overseeing the daily operations of a fine dining restaurant, ensuring exceptional guest experiences, operational excellence, and high service standards in line with luxury hospitality expectations.

The role manages all front-of-house restaurant operations including service delivery, team leadership, guest relations, financial performance, training, and coordination with culinary and supporting departments to ensure smooth and efficient operations.

Restaurant Operations

  • Manage the overall day-to-day operations of the fine dining restaurant.
  • Ensure all service standards, operational procedures, and guest experience expectations are consistently maintained.
  • Monitor restaurant setup, cleanliness, ambience, presentation, and service flow.
  • Ensure smooth coordination between front-of-house and kitchen operations.
  • Handle guest feedback, complaints, and service recovery professionally and efficiently.
  • Maintain high levels of guest satisfaction and repeat business.

Team Leadership & Staff Management

  • Lead, supervise, and motivate the restaurant team including supervisors, captains, hosts, bartenders, and waitstaff.
  • Conduct daily briefings and communicate operational updates to the team.
  • Manage staff scheduling, duty rosters, attendance, and manpower allocation.
  • Ensure all colleagues maintain grooming, hygiene, and professional presentation standards.
  • Support recruitment, onboarding, training, and performance management initiatives.
  • Foster a positive, collaborative, and service-driven working environment.

Guest Experience & Service Excellence

  • Personally engage with guests to ensure a personalized and memorable dining experience.
  • Maintain strong knowledge of menus, beverages, promotions, and fine dining service etiquette.
  • Ensure VIP guests and special requests are handled with attention to detail.
  • Monitor service quality and continuously improve guest satisfaction levels.

Financial & Commercial Responsibilities

  • Support achievement of revenue targets, profitability, and cost control objectives.
  • Monitor daily sales performance and operational expenses.
  • Control wastage, breakage, and inventory usage.
  • Assist in budgeting, forecasting, and financial reporting.
  • Ensure accurate billing, cashiering, and closing procedures.

Inventory & Compliance

  • Coordinate with purchasing and stores regarding operational requirements.
  • Monitor stock levels of beverages, operating supplies, and restaurant equipment.
  • Ensure compliance with hygiene, health, safety, and municipality regulations.
  • Maintain HACCP and food safety standards at all times.

Events & Promotions

  • Support execution of private dining events, promotions, and special occasions.
  • Coordinate with Marketing and Events teams regarding restaurant campaigns and guest experiences.
  • Assist in developing new ideas to improve restaurant performance and guest engagement.

  • Diploma or Degree in Hospitality Management or related field preferred
  • Minimum 5–7 years of experience in restaurant operations within luxury hospitality or fine dining environments
  • Minimum 2–3 years of experience in a Restaurant Manager role
  • Strong knowledge of international fine dining service standards
  • Experience within UAE/GCC hospitality industry is advantageous
