Role overview

Responsibilities

• Coordinate pastry and dessert preparation and presentation in line with culinary standards.
• Help achieve food-cost targets; monitor baking ingredients and place orders within budget.
• Prepare cakes, cookies, pies, afternoon tea sweets, plated desserts, and mignardises using traditional and modern recipes.
• Develop new items, including gluten-free products, and refresh restaurant menus while maintaining quality.
• Maintain par stocks, rotate products, and uphold pastry-section cleanliness and hygiene.
• Prepare duty rotas, support vacation planning, and manage cover and overtime within agreed limits.
• Support dish demonstrations and keep records of them.
• Manage the Pastry Department in the Head Chef’s absence.
• Support kitchen performance, member satisfaction, cost control, and team development.

Requirements

• At least 2 years’ experience in the same role at a luxury hotel or reputable high-end restaurant.
• Internationally recognised professional certification.
• Good working level of written and spoken English.
• Strong organisation, time management, flexibility, team management, and problem-solving abilities.
• Integrity, confidentiality, self-motivation, and commitment to continuous improvement.
• Ability to work long shifts and stand for extended periods.
