Role overview

Responsibilities

• Lead wine and sake sales and revenue across the restaurant beverage operation and motivate the team.
• Source wines and sake, manage supplier relationships, and negotiate prices and stock allocation.
• Forecast consumption, maintain inventory, and manage beverage cost and gross-profit targets.
• Control stock, orders, listings, par levels, corked wines, wastage, and comps; review sales, stock rotation, and profitability.
• Develop wine and sake menus and lists, and collaborate on beverage marketing strategy.
• Train colleagues in wine and sake products, service, and selling techniques.
• Maintain procedures and service standards while improving guest satisfaction and operating within budget.

Experience and skills

• At least 5 years in the same or a similar role in a luxury hotel or fine-dining restaurant.
• Internationally recognized professional certification.
• Excellent written and spoken English and ability to recommend food and wine or sake pairings.
• Strong organizational, time-management, team-management, communication, and listening skills; flexible and able to work long shifts and stand for extended periods.
• Demonstrate integrity, confidentiality, and self-motivation, and support continuous improvement.
