Role overview

Responsibilities

• Lead wine and sake sales and revenue for the restaurant beverage operation and motivate the team.
• Source wines and sake, manage supplier relationships, and negotiate pricing and stock allocation.
• Forecast consumption and requirements, maintain inventory, and manage beverage costs and gross-profit targets.
• Control orders, stock, listings, par levels, corked wines, wastage, and complimentary items.
• Analyze sales to support stock rotation and profitability.
• Develop and update wine and sake menus and lists.
• Coordinate beverage marketing strategy with other departments.
• Train colleagues in wine and sake products, service, and selling techniques.
• Maintain service standards and procedures and continually improve guest satisfaction.

Candidate requirements

• At least five years in the same or a similar role in a luxury hotel or fine-dining restaurant.
• Internationally recognized professional certification.
• Excellent written and spoken English.
• Ability to recommend food and wine or sake pairings.
• Strong organization, time management, flexibility, team management, communication, and listening skills.
• Integrity, confidentiality, self-motivation, and commitment to continuous improvement.
• Ability to work long shifts and stand for extended periods.
