Ensures the smooth operation of an assigned kitchen section and maintains the hotel's standards.
Kitchen duties
- Prepare à la carte and buffet dishes consistently according to hotel recipes and standards.
- Check mise en place daily for freshness and quality; rotate products in chillers to minimize waste and spoilage.
- Know menu items, daily features, and promotions; communicate with outlet chefs about guest feedback.
- Keep the section, work areas, utensils, and equipment clean, maintained, and organized.
- Follow kitchen procedures and food safety, sanitation, HACCP, health, safety, fire, and security requirements.
- Share ideas in shift briefings, communicate standards to kitchen colleagues, and support positive working relationships.
- Attend meetings and training, support departmental training, and undertake training provided by senior chefs.
- Ensure night coverage and pass information to the next shift; provide professional service and maintain a positive presentation.
Experience and education
- 2–3 years in a similar role in a five-star hotel.
- Basic Food Hygiene Certificate and Hospitality School Certificate.
- HACCP control knowledge.
- Good product knowledge and ability to produce checklists.
- Ability to make decisions, administer disciplinary action, and work under pressure, independently or in a team.
- Good communication skills; organized, disciplined, dedicated, and loyal.
- Computer literacy in Microsoft Windows applications is an asset.
