About the role
Six-month Chef de Partie position at Bab Al Shams Desert Resort in Dubai.
Assist the Chef de Cuisine and Sous Chef with operations and cover for them when absent.
Supervise kitchen staff and help deliver high food-preparation standards and guest experiences.
Key duties
- Assign tasks to Demi Chefs and Commis Chefs and check they are completed correctly; maintain good employee relations and motivate colleagues.
- Check the information board for banquet and organizational updates, ensure night-shift coverage, and pass information to the next shift.
- Complete HACCP forms, maintain hygiene standards, keep work areas clean, and prevent cross-contamination.
- Ensure food preparation meets standards; prepare and present high-quality food and prepare mise en place for relevant menus.
- Ensure food supplies are good quality and stored correctly; respond to guest queries in a timely and efficient manner.
- Contribute to cost control, gross profit margins, and departmental and financial targets.
- Assist other departments and support training in company procedures; report maintenance, hygiene, and hazard issues.
- Follow hotel security, fire, health and safety, and food safety requirements; assist and monitor Commis-level staff.
Experience and qualifications
- Two to three years in a similar role at a five-star hotel and supervisory experience.
- HACCP control knowledge, good product knowledge, and ability to produce checklists.
- Positive attitude, good communication, and ability to work under pressure, independently, or in a team.
- Ability to make decisions and administer disciplinary action.
- Organized and disciplined, dedicated, and loyal.
