Ensures the smooth running of the assigned kitchen section and maintains hotel standards.
The position is at Bab Al Shams Desert Resort in Dubai.
Kitchen operations
- Prepare a la carte and buffet dishes consistently according to hotel recipes and standards.
- Check mise en place daily for freshness and quality, and rotate chiller products to minimize waste and spoilage.
- Maintain knowledge of menu items, daily features, and promotions.
- Keep work areas, utensils, and equipment clean and maintained.
Teamwork and service
- Share ideas during shift briefings and ensure kitchen colleagues know standards and expectations.
- Coordinate with outlet chefs on guest feedback and maintain communication across hotel departments.
- Ensure night coverage and pass information to the next shift.
- Attend meetings and training, support departmental training, and apply training from senior chefs.
Experience and qualifications
- Requires 2–3 years in a similar role in a five-star hotel.
- Requires a Basic Food Hygiene Certificate and a Hospitality School Certificate.
- Requires knowledge of HACCP controls, good product knowledge, and the ability to produce checklists.
- Requires communication skills, decision-making, and the ability to work under pressure independently or in teams.
- Ability to administer disciplinary action is listed as a requirement.
Additional capabilities
- Organization, discipline, dedication, and loyalty are described as essential.
- Computer literacy in Microsoft Windows applications is an asset, not a stated requirement.
Food safety and workplace standards
- Follow kitchen policies, safety and sanitation procedures, food safety legislation, and HACCP controls.
- Maintain personal hygiene, wear the correct uniform and name tag, and provide courteous, professional service.
