Job Purpose
Demi Chef position supporting food preparation and daily kitchen operations for hotel functions and restaurants.
The role works with kitchen supervisors and department heads and may take charge of the department when the Chef de Partie is absent.
Food Preparation and Operations
- Prepare soups, stocks, roast items, and daily mise-en-place for functions and restaurants.
- Manage food requisitions and control stock items.
- Assist the Chef de Cuisine, Sous Chef, and Junior Chef with daily kitchen operations.
- Check refrigerators and set up the work station for the day.
Quality and Sanitation
- Coordinate with the steward department on general cleanliness, sanitation, and staff personal hygiene.
- Verify that products have been delivered and report short deliveries to the supervisor.
- Check that delivered products meet the required quality standards.
Guest and Team Support
- Work closely with the supervisor and department head.
- Incorporate customer information into strategy and build relationships with regular and long-staying guests.
- Check on training from time to time.
- Take charge of the department when the Chef de Partie is absent or when required.
Qualifications and Experience
- At least 2 years of experience in a similar position within a 4- or 5-star hotel or comparable restaurant is required.
- Experience in a café environment is preferred.
- A hotel school degree, diploma, or equivalent culinary qualification is required.
- HACCP certification or knowledge is advantageous.
Workplace
- The role is based in an operating hotel kitchen in Dubai and requires on-site kitchen work.
