Position Summary

We are seeking a skilled and passionate **Chef de Partie (CDP) – Sushi** to join our culinary team.

The ideal candidate will have strong experience in Japanese cuisine, particularly sushi preparation, and will be responsible for maintaining the highest standards of food quality, presentation, consistency, and kitchen hygiene.

This role requires attention to detail, technical expertise, and a commitment to delivering exceptional guest experiences.

Key Responsibilities

  • Prepare and present sushi, sashimi, nigiri, maki rolls, and other Japanese dishes according to established recipes and standards.
  • Manage the sushi section during service, ensuring smooth and efficient operations.
  • Maintain consistency in food quality, taste, and presentation.
  • Ensure all ingredients are properly prepared, stored, and rotated according to food safety standards.
  • Monitor inventory levels and communicate stock requirements to the Sous Chef or Head Chef.
  • Minimize food waste through effective planning and portion control.
  • Ensure compliance with HACCP, food safety, sanitation, and hygiene regulations.
  • Assist in training and guiding Commis Chefs and junior kitchen team members.
  • Support menu development and contribute ideas for new dishes and seasonal offerings.
  • Maintain cleanliness and organization of the sushi station and kitchen areas.
  • Collaborate closely with the kitchen and service teams to ensure an exceptional dining experience.

& Requirements

  • Diploma or certification in Culinary Arts is preferred.
  • Minimum **2–4 years of experience** as a Sushi Chef or Chef de Partie in a reputable Japanese restaurant.
  • Strong knowledge of Japanese cuisine, sushi preparation techniques, seafood handling, and knife skills.
  • Understanding of food safety, hygiene, and HACCP standards.
  • Ability to work efficiently in a fast-paced, high-volume environment.
  • Strong organizational and time-management skills.
  • Ability to work collaboratively within a multicultural team.
  • Flexibility to work shifts, weekends, and public holidays.
