Role overview
The Sommelier Supervisor supports the Head and Assistant Head Sommelier in delivering an excellent wine experience for members and guests.
The role supervises daily wine service operations, guides the sommelier team, and upholds service and quality standards.
Responsibilities
- Support management and leadership of wine sales and revenue across the restaurant beverage operation, motivating the team.
- Control stock, wine orders, listings, par levels, corked wines, wastage, and complimentary items.
- Review and analyze sales to maintain stock rotation and profitability within targets.
- Keep the wine list current and ensure vintages are correct.
- Handle wine requests, enquiries, and complaints and take appropriate action.
- Monitor glassware and maintain it in appropriate condition.
- Help plan and develop the restaurant wine marketing strategy with other departments.
- Control operating costs through efficient and responsible use of glassware and equipment.
Candidate requirements
- At least 3 years’ experience in the same or a similar role in a luxury hotel or fine-dining restaurant.
- Internationally recognized professional certification.
- Excellent written and spoken English.
- Ability to recommend food and wine pairings.
- Strong organisational and time-management skills, with flexibility.
- Excellent team management, communication, and listening skills.
- Integrity, confidentiality, self-motivation, and commitment to continuous improvement.
- Ability to work long shifts and stand for extended periods.
