Job Summary

We are seeking a highly skilled and passionate

Senior Sous Chef specializing in Italian Cuisine

to support the Head Chef in managing kitchen operations and delivering exceptional, authentic Italian dishes.

The ideal candidate has strong leadership skills, deep knowledge of traditional and modern Italian cooking techniques, and the ability to maintain high culinary standards in a fast-paced kitchen environment.

Kitchen Operations

  • Assist the Head Chef in overseeing daily kitchen operations
  • Ensure consistent preparation and presentation of high-quality Italian dishes
  • Supervise food production for à la carte, buffet, and special events
  • Maintain smooth service during busy meal periods

Menu Development

  • Support in creating and updating Italian menus, seasonal specials, and new dishes
  • Ensure authenticity in flavors, ingredients, and presentation
  • Contribute creative ideas while respecting traditional Italian culinary standards

Food Quality & Safety

  • Ensure all dishes meet quality, taste, and presentation standards
  • Monitor portion control and minimize food waste
  • Maintain strict hygiene, sanitation, and food safety standards (HACCP)

Team Leadership

  • Supervise and train junior chefs and kitchen staff
  • Delegate tasks effectively and ensure teamwork during service
  • Provide guidance, coaching, and performance feedback

Inventory & Cost Control

  • Assist in ordering, receiving, and storing ingredients properly
  • Monitor stock levels and reduce wastage
  • Support cost control measures to meet food cost targets

Required Skills & Qualifications

  • Proven experience as a
  • Sous Chef or Senior Chef de Partie
  • in Italian cuisine
  • Strong knowledge of traditional Italian cooking methods, sauces, pasta, risotto, pizza, and regional specialties
  • Ability to work in a high-pressure, fast-paced kitchen
  • Excellent leadership and team management skills
  • Understanding of kitchen financials, food costing, and inventory control
  • Knowledge of food safety and hygiene regulations
  • Culinary degree or professional kitchen training preferred
