Position Summary
The **Senior Cook** plays a key role in the kitchen operation by ensuring the consistent preparation and presentation of high-quality dishes in accordance with Momofuku’s culinary standards.
This position supports the Chef de Partie and Sous Chef in managing daily kitchen operations, maintaining food quality, and mentoring junior kitchen team members while contributing to an efficient and organized work environment.
Key Responsibilities
- Prepare, cook, and present menu items according to established recipes, specifications, and quality standards.
- Ensure consistency in food taste, appearance, portioning, and presentation during service.
- Support the Chef de Partie in organizing and managing assigned kitchen sections.
- Assist with mise en place preparation and ensure all ingredients are properly stored and labeled.
- Monitor food quality and report any shortages, discrepancies, or quality concerns.
- Maintain high standards of cleanliness, sanitation, and food safety in compliance with HACCP requirements.
- Train and guide Commis Chefs and junior kitchen staff on preparation techniques and kitchen procedures.
- Minimize food wastage through proper handling, storage, and portion control.
- Ensure kitchen equipment is operated safely and maintained in good working condition.
- Collaborate with the culinary team to achieve smooth service and operational excellence.
- Follow company policies, health and safety regulations, and brand standards at all times.
Requirements
- Minimum 3–5 years of culinary experience in upscale casual dining, premium restaurants, or fine-dining establishments.
- Experience working in high-volume, fast-paced kitchen environments.
- Strong understanding of food preparation techniques, cooking methods, and kitchen operations.
- Knowledge of food safety, HACCP, and hygiene standards.
- Ability to work efficiently under pressure while maintaining attention to detail.
- Strong teamwork, communication, and organizational skills.
- Culinary diploma or professional culinary training is preferred.
- Passion for hospitality, continuous learning, and delivering exceptional dining experiences.
