Al Ghalia seeks an experienced and creative Pastry Sous Chef to work closely with the Head Pastry Chef.
The role assists with daily kitchen operations, production supervision, quality control, and development of pastry offerings.
Key responsibilities
- Oversee and participate in preparing and executing pastries, plated desserts, doughs, chocolates, and baked goods.
- Assist in supervising, training, and mentoring pastry cooks and kitchen staff.
- Collaborate on seasonal menus, specials, and recipe refinement.
- Maintain standards for taste, texture, presentation, and portion control.
- Manage inventory, minimize waste, assist with ordering, and maintain food cost targets.
- Enforce sanitation, food safety regulations including HACCP, and kitchen safety guidelines.
Qualifications and experience
- At least 4 years of culinary or pastry leadership experience in a high-volume bakery, restaurant, or hotel setting.
- Strong command of classical and modern pastry techniques, including chocolate work, doughs, laminations, sugar work, and plating.
- Demonstrated record of visually appealing and consistent pastry work.
- Excellent communication, calm composure under pressure, and ability to train junior staff.
- Ability to stand for extended periods and lift up to 50 lbs.
