Management role responsible for hygiene and food safety compliance in food and beverage operations.
Full-time position in Ajman; not remote.
Food hygiene and safety operations
- Verify compliance with Marriott Brand Standard Audit requirements, food hygiene regulations, licensing conditions, and codes of practice.
- Advise and monitor food handlers on proper food handling and identify risks, taking preemptive remedial action.
- Provide technical advice on product labeling to meet government requirements and train new hires, trainees, and other food handlers.
- Handle hygiene complaints or enquiries from customers and local food safety and health departments.
- Conduct and document daily kitchen inspections covering personnel, environmental, and food hygiene; prepare corrective action plans.
- Conduct vendor and internal BSA inspections with purchasing, culinary leadership, and kitchen cleaning staff.
- Inspect kitchen equipment and ensure defects and non-conformities are remedied.
- Coordinate cleaning programs, identify trends, and recommend improvements.
- Maintain collaborative employee relationships, liaise with pest control, improve hygiene standards, refresh food safety standards, and maintain records.
Education and experience
- High school diploma or GED and 2 years of experience in food and beverage, culinary, or a related professional area; alternatively, a two-year degree in Hotel and Restaurant Management, Hospitality, Business Administration, or a related major.
- Environmental Health or Culinary degree is preferred.
