Food hygiene and safety
- Verify Brand Standard Audit requirements and compliance with food hygiene regulations, licensing conditions, and codes of practice.
- Advise and monitor food handlers on proper handling practices; provide hygiene training for new hires and trainees.
- Identify operational risks and take preventive action; provide technical advice on product labeling requirements.
- Handle hygiene complaints and enquiries from customers and local food safety and health departments.
Inspections and corrective action
- Conduct and record daily inspections of personnel, environmental, and food hygiene conditions, with corrective action plans as needed.
- Conduct vendor inspections with purchasing and culinary leadership and internal BSA inspections with culinary and cleaning teams.
- Inspect kitchen equipment and verify that defects and non-conformities are remedied.
- Coordinate cleaning programs in food and beverage areas, review trends, and recommend improvements.
Standards and team coordination
- Maintain and improve hygiene standards and refresh food safety standards for food handlers.
- Maintain documentation on hygiene and food safety standards throughout operations.
- Maintain collaborative relationships with employees and liaise with the pest control company, monitoring its performance.
Education and experience
- High school diploma or GED and two years of experience in food and beverage, culinary, or a related professional area; alternatively, a two-year degree in hotel and restaurant management, hospitality, business administration, or a related major.
- Environmental health degree or culinary degree is preferred.
