Responsible for verifying hygiene and food safety compliance, advising on food handling, training staff, identifying operational risks, and advising on product labeling.
Education and experience
- High school diploma or GED plus two years of experience in food and beverage, culinary, or a related professional area; alternatively, a relevant two-year degree from an accredited university.
- Environmental Health or Culinary degree preferred.
Hygiene and food safety operations
- Verify Marriott Brand Standard Audit compliance, food handling practices, and compliance with food hygiene regulations, licensing conditions, and codes of practice.
- Identify risks in food operations, take remedial action, and advise on product labeling requirements.
- Train food handlers and handle food hygiene complaints or enquiries from customers and local food safety and health departments.
- Conduct and record daily kitchen inspections covering personal, environmental, and food hygiene; provide corrective action plans.
- Conduct vendor and internal BSA inspections with purchasing, culinary leadership, and kitchen cleaning staff.
- Inspect kitchen equipment and ensure defects and non-conformities are addressed.
- Coordinate cleaning programs, identify trends, and recommend improvements; liaise with pest control providers and monitor performance.
- Maintain and improve hygiene standards, refresh food safety standards for handlers, and maintain hygiene and food safety documentation.
- Establish and maintain collaborative relationships with employees.
