Full-time management position responsible for verifying hygiene and food-safety compliance in hotel food operations.
Provides food-handling guidance, training, risk prevention, and technical advice on product labeling requirements.
Education and experience
- High school diploma or GED and two years of experience in food and beverage, culinary, or a related professional area; alternatively, a two-year degree in Hotel and Restaurant Management, Hospitality, Business Administration, or a related major.
- An Environmental Health degree or Culinary degree is preferred.
Food safety and compliance
- Verify compliance with Marriott Brand Standard Audit requirements, food hygiene regulations, licensing conditions, and codes of practice.
- Advise and monitor food handlers, identify risks, take remedial action, and provide technical advice on product labeling.
- Train food handlers, including new hires and trainees, and regularly refresh food-safety standards.
- Handle food hygiene complaints and inquiries from customers and local food safety and health departments.
Inspections and operations
- Conduct and document daily kitchen inspections and provide corrective action plans as needed.
- Inspect vendors with purchasing and culinary leadership, conduct internal audits, and ensure kitchen equipment defects and non-conformities are remedied.
- Coordinate cleaning programs across food and beverage areas and recommend improvements based on observed trends.
- Maintain employee relationships and liaise with pest control providers, monitoring their performance.
- Maintain and improve hygiene standards and document food-safety and hygiene practices throughout operations.
