The Food & Beverage Stock Controller monitors stock usage, purchasing, wastage, and operational costs.
Key responsibilities
- Compare daily food and beverage sales with stock usage to ensure depletion aligns with revenue.
- Monitor kitchen and bar wastage, identify cost-reduction opportunities, and follow restaurant cost-control procedures.
- Carry out physical stock counts, investigate shortages, and resolve unusual cost discrepancies.
- Audit purchases, supplier invoices, and received goods for accurate pricing and recording.
- Compare actual costs with budget and prepare daily, weekly, and monthly cost reports.
- Assist culinary and management teams with menu costing and profit-margin control.
- Work with Kitchen, Stores, Purchasing, F&B Service, and Finance teams to streamline operations.
Requirements
- Diploma or bachelor's degree in accounting, finance, business administration, or a closely related field.
- At least 3 years of proven hotel or restaurant accounting or cost-control experience.
- Advanced Microsoft Excel proficiency and deep knowledge of food, beverage, and stock-control methodologies.
- Exceptional numerical and analytical skills, attention to detail, and accuracy.
- Strong communication and organizational skills; honest, reliable, and able to work with minimal supervision.
- Hospitality-environment experience is highly advantageous.
