Position Overview
A **Commis Pastry Chef** is an entry-level role in the pastry section, assisting senior pastry chefs in preparing desserts, baked goods, and confectionery.
This position is ideal for fresh graduates or those starting their career in pastry arts.
Key Responsibilities
- **Pastry Preparation:** Assist in preparing doughs, batters, fillings, and garnishes.
- **Support Senior Chefs:** Work under Chef de Partie or Pastry Sous Chef to execute dessert menus.
- **Baking & Decoration:** Learn techniques in baking, glazing, chocolate work, and plating.
- **Kitchen Hygiene:** Maintain cleanliness, follow HACCP standards, and ensure food safety.
- **Stock & Inventory:** Assist in receiving, storing, and rotating pastry ingredients.
- **Learning & Development:** Gain exposure to bread, cakes, tarts, and plated desserts.
Qualifications
- **Education:** Diploma or certificate in Pastry Arts preferred.
- **Experience:** 0–2 years in pastry kitchens (internship acceptable).
- **Skills:**
- Basic knowledge of baking and pastry techniques
- Creativity in decoration and presentation
- Teamwork and communication skills
- Understanding of hygiene and HACCP
KPIs (Performance Indicators)
- Accuracy in pastry preparation and portioning
- Compliance with hygiene and safety standards
- Creativity and consistency in dessert presentation
- Efficiency in supporting senior pastry chefs
