Commis I role based in the Yù & Mì kitchen at Mandarin Oriental Downtown, Dubai.
The Commis reports to the Chef de Partie and supports daily kitchen operations.
Kitchen duties
- Assist in preparing and presenting high-quality dishes according to hotel standards.
- Follow recipes, portion controls, and presentation specifications from senior chefs.
- Maintain cleanliness and organization of the workstation and kitchen equipment.
- Support mise en place and daily kitchen operations, including timely service delivery.
- Work effectively with other kitchen sections to maintain smooth workflow.
- Comply with health, food safety, hygiene, HACCP, and UAE Municipality requirements.
Qualifications and skills
- High school qualification or equivalent is required.
- A degree or Higher National Diploma in Hospitality or Culinary Arts is preferred.
- At least one year of Commis experience in a high-volume hotel or restaurant is preferred.
- Basic food handling, preparation, and kitchen operations skills are expected.
- Familiarity with food hygiene and safety standards is advantageous.
- Passion for bakery and willingness to learn and develop within the culinary team.
