Job Purpose
The job holder is responsible to manage material resource planning and forecast of ingredients for production across Emirates (EK) Economy, EK Premium, Fly Dubai (FZ), Other Airlines (OAL), Central Production Kitchen (CPK), and all lounges, events and festive menus to prevent supply shortages and maintain smooth production flow. Additionally, the role will validate master data through rigorous validation with respect to item codes and Bill of Materials (BOM) for accurate financial impact, while enforcing compliance with the defined standards and specifications.
Key Result Areas
1.
Prepare and distribute the Estimated Monthly Consumption (EMC) of raw ingredients for production across EK Economy, EK Premium, FZ, OAL, CPK, and all lounges & Events, Festive menus to stakeholders, including Supply Chain, Sourcing Solutions, and Culinary, ensuring accurate and timely ingredient planning.
2. Analyze passenger forecasts using digital tools (CAT 360 platform), incorporating historical data to create buffer standards and specifications, then leverage these insights to run the Material Resource Planning system for EK Economy, EK Premium, OAL, Fly Dubai, lounges, CPK, and commercial F&B services, to ensure optimal raw material procurement, prevent supply shortages, and maintain uninterrupted production flow.

Verify the accuracy of CAT360 generated forecasts and Master data to provide timely coaching and guidance to the team, ensuring alignment with production requirements for EK Economy, EK Premium, OAL, and FZ to support efficient operations.

Develop Standard Operating Procedures (SOPs) for planning and forecasting and conduct team training to ensure compliance with the set processes and quality standards.

Ensure compliance with quality policy and ISO 9001:2008 standards by monitoring department performance to deliver high-quality forecasting and planning outcomes.

Lead the Standards and Specifications team in creating and managing master data, including item codes and Bill of Materials (BOM) for Flight Catering Solutions (FCS), while enforcing food product standards and implementing timely yield management through BOM analysis and operational adjustments.
7. Supervise the daily flight schedule and master data management, including participation in meal presentation, airline details, menu specifications, rotation cycles, and loading scales, while coordinating with EK In-Flight Services (IFS) and internal stakeholders to ensure accurate communication and operational efficiency.

Lead cost-benefit projects by conducting feasibility studies, cost comparison analyses, and product specification reviews to optimize resource allocation, enhance operational efficiency, and support strategic business decisions.
Knowledge, Skills & Minimum Experience
*Education Qualification:*
a) Bachelor’s degree in hospitality management, Food Science, or a related field.
b) Certification in Supply Chain Management / Master Data Management or Material Resource Planning (MRP) is preferred.
c) ISO 9001:2008 certification training or relevant quality management training is preferred.
*Work Experience:*
a) Minimum 6 years of experience in mass food production environment.
b) Previous experience using ERP system in Hospitality industry.
*Skills:*
a) Proven ability to lead, coach, and mentor teams, fostering collaboration and adherence to best practices.
b) Proficiency with MS Office Suite
c) Strong interpersonal, verbal, and written communication skills to work effectively with internal teams and external stakeholders.
d) High level of accuracy and attention to detail in maintaining operational procedures.
e) Excellent ability to manage time effectively and prioritize competing tasks in a fast-paced environment.
