Responsibilities
- Lead beverage operations across several service styles and simultaneous dispense bars.
- Schedule, mentor, and motivate bartenders and bar backs.
- Manage beverage ordering using par levels and sales trends; maintain availability of spirits and cocktail ingredients.
- Audit inventory against POS records and address variances, shrinkage, pouring inefficiencies, and wastage.
- Use yield and drink costing to maintain pour-cost targets across cocktails and bottle service.
- Maintain premium beverage standards and ensure compliance with UAE alcohol licensing, municipality health and safety, and DTCM requirements.
Ideal candidate
- At least 2–3 years as an Assistant Bar Manager or Bar Manager in a high-volume, premium Dubai venue.
- Experience managing large-scale beverage operations across multiple simultaneous dispense bars.
- Full knowledge of UAE alcohol licensing regulations, municipality health and safety directives, and the DTCM compliance framework.
- Deep knowledge of premium spirits, classic cocktails, and avant-garde cocktail programs.
- Strong financial controls, high-value inventory management, service-step auditing, and wastage reduction.
- Advanced yield, drink-costing, and pour-cost management skills.
- Ability to lead, schedule, and motivate a large international team under pressure.
- Flexibility to work shifts, weekends, and public holidays.
