Job Title

Senior Chef de Partie – Leto Restaurant ABU DHABI

Role Purpose

To lead and manage a key kitchen section with a high level of autonomy, ensuring the delivery of exceptional Mediterranean dishes in line with L’ETO Restaurant's fine dining standards.

The Senior CDP plays a critical role in supervising team members, maintaining operational excellence, and supporting culinary leadership in driving quality, consistency, and efficiency.

Key Responsibilities

  • Take full ownership and accountability of the assigned kitchen section, ensuring smooth and efficient operations at all times
  • Maintain absolute consistency in taste, quality, portioning, and presentation across all service periods
  • Lead, supervise, and motivate Demi Chefs and Commis Chefs, ensuring tasks are delegated effectively
  • Train and mentor junior team members, supporting their technical development and performance improvement
  • Ensure mise en place is completed to the highest standards, with proper planning for service readiness
  • Oversee section setup before service and ensure efficient breakdown and handover after service
  • Monitor and control service flow, proactively addressing delays or operational challenges
  • Conduct quality checks on all dishes leaving the section to ensure alignment with brand standards
  • Enforce strict compliance with food safety regulations, HACCP standards, and hygiene practices. Ensure proper handling, storage, labeling, and rotation (FIFO) of all food products
  • Support kitchen audits, inspections, and compliance checks as required

Requirements & Qualifications

  • Minimum **4–6 years of experience** in **fine dining restaurants**, including at least **2 years as Chef de Partie**
  • Strong expertise in **Mediterranean cuisine**
  • Proven leadership and team supervision experience
  • Advanced understanding of modern cooking techniques and fine dining presentation
  • Strong knowledge of food safety, HACCP compliance, and kitchen operations
  • Ability to perform effectively in a fast-paced, high-pressure environment
