Flash Freeze Manufacturing LLC is the only flash freeze processing facility inside the Dubai Fruit and Vegetable Market at Ras Al Khor. We freeze surplus fruit the same day it arrives at the market.

We are a founding team. We are early. Everything here is being built from scratch. If that sentence excites you — keep reading. If you need a system handed to you before you can operate — this is not the right place.

The Role

The QC Engineer owns food safety at Flash Freeze. Not maintains it. Owns it.

This is a new facility. There is no inherited HACCP system to follow. You are building the documentation, training the team, monitoring the CCPs, and ensuring that when a Dubai Municipality inspector walks through the door they find exactly what they should. Every single time.

This role is on the floor from 6am. It is not a desk job. You are at the receiving dock for every delivery. You are watching the output. You are checking seals. The paperwork matters. But the floor is where it is won or lost.

What You Will Do

→ Complete all daily HACCP checklists — pre-production, during production, end of day

→ Monitor and document all five CCPs on every production run — no exceptions

→ Conduct incoming fruit inspections — temperature, visual quality, weight, documentation

→ Monitor IQF output — quality, temperature compliance, seal integrity checks

→ Maintain all food safety records — traceability logs, corrective action records, cleaning sign-offs

→ Train all production staff on food hygiene at induction and quarterly refreshers

→ Manage the non-conformance log — document, investigate, close every deviation

→ Maintain Dubai Municipality compliance documentation at audit-ready standard

→ Report all CCP deviations to the Operations Manager the same day — no sitting on it

Apply If You

✓ Hold a HACCP Level 2 or Level 3 certificate — valid, current, and you can produce it today

✓ Have implemented or maintained a HACCP system in a food production environment — not just audited one

✓ Have experience in frozen food, fresh produce, cold chain, or FMCG food production

✓ Are meticulous about documentation — you do not skip paperwork because the shift is busy

✓ Have worked on a production floor in a food safety role — not just in an office or a lab

✓ Can explain all seven HACCP principles without looking them up

✓ Are genuinely comfortable with early starts and physical production environments

Do Not Apply If You

✗ Your HACCP certificate is expired or you cannot produce it within 24 hours of being asked

✗ You have only ever audited food safety systems — never built or maintained one

✗ You treat daily documentation as optional when production is running smoothly

✗ You have no experience in a physical food production environment
