Role overview

Wine and guest service

• Recommend wines and approved pairings within guest preferences and budgets, explaining producers and styles in accessible language.
• Present bottles, confirm label and vintage, use suitable glassware, and serve at approved temperatures and measures.
• Check opened wines using preservation procedures and escalate suspected faults; follow responsible alcohol service procedures and refer concerns to the duty manager.
• Maintain wine storage, rotation, opened-bottle records and preservation routines; assist stock counts and record breakage, waste and discrepancies.
• Check availability and vintages against the printed list and POS; submit list changes for approval.
• Recommend replenishment based on demand and stock levels. Management approval is required for supplier selection, purchasing and price changes.
• Manage an assigned section or support floor service, including accurate orders and payments.
• Communicate allergies to the kitchen and bar, and verify pairing ingredients when relevant.
• Support wine training, supplier tastings, member wine dinners and approved pairing events; share guest feedback and sales observations with venue leadership.
• Support outlet and station setup, stock and equipment checks, report readiness gaps, attend training and mock services, and practise wine presentation and pairing recommendations.

Requirements and standards

• Restaurant service experience and foundational wine knowledge are required.
• An introductory wine qualification or equivalent practical training is desirable.
• Collaborate and communicate clearly with guests and colleagues across departments.
• Follow approved hygiene, allergy communication, safety and emergency procedures; promptly report incidents and unsafe conditions.
• Carry out additional reasonable duties within training and competence as assigned by management.
