Commis II in the Pastry Kitchen at Raffles Dubai, supporting mise en place, food preparation, and food presentation as part of the kitchen brigade.
Kitchen duties
- Coordinate section mise en place and service with the Chef de Partie, and carry out instructions correctly.
- Prepare daily dry-store and food requisitions and kitchen transfers with the Chef de Partie for approval.
- Follow recipe specifications for portion size, quantity, and quality; complete daily mise en place and food-storage checklists.
- Keep the section clean and tidy and follow fire, hygiene, and safety policies.
- Report equipment failures and follow up on repairs.
- Attend kitchen meetings, check operational information, and pass relevant information to the next shift.
- Record and report accidents and sickness to the Executive Chef or Pastry Chef.
- Assist the Pastry Chef with new recipes and menu ideas; maintain good employee relations and motivate colleagues.
Qualifications and experience
- Minimum one year of food and beverage serving experience.
- Average reading, writing, and oral proficiency in English.
- Good communication and interpersonal skills; able to work as a team player.
