Job Summary

We are seeking an experienced and highly skilled **Pastry Sous Chef** to take full responsibility for managing and overseeing all pastry operations.

The successful candidate will lead the pastry kitchen, ensure the consistent production of premium-quality desserts and baked goods, manage the pastry team, control food costs, and maintain the highest standards of food quality, hygiene, and presentation.

This role requires a hands-on leader with excellent pastry expertise, operational knowledge, and the ability to perform in a high-volume hospitality environment.

Key Responsibilities

  • Manage and oversee all daily pastry kitchen operations.
  • Plan, organize, and supervise the production of pastries, cakes, breads, desserts, chocolates, and specialty baked items.
  • Ensure consistent product quality, taste, and presentation across all pastry offerings.
  • Develop new dessert menus, seasonal specials, and innovative pastry concepts.
  • Supervise, train, schedule, and motivate the pastry team to achieve operational excellence.
  • Monitor production schedules to ensure timely preparation and service.
  • Maintain proper inventory levels and oversee ordering of pastry ingredients and supplies.
  • Implement cost control measures while minimizing food waste.
  • Ensure compliance with HACCP, food safety, sanitation, and hygiene regulations.
  • Monitor stock rotation, product freshness, and storage procedures.
  • Conduct quality inspections of ingredients and finished products.
  • Coordinate with the Executive Chef and kitchen management regarding menu planning and operational requirements.
  • Ensure all pastry equipment is properly maintained and report repair requirements.
  • Maintain accurate production records and inventory documentation.
  • Ensure the pastry kitchen remains clean, organized, and compliant with company standards.
  • Assist during special events, catering functions, and high-volume service periods.
  • Drive continuous improvement in pastry production processes and team performance.

Qualifications

  • Minimum **5 years of pastry experience**, including at least **2 years in a supervisory or Sous Chef role**.
  • Diploma or Certificate in Pastry Arts, Culinary Arts, or a related field is preferred.
  • Strong expertise in artisan breads, cakes, desserts, viennoiserie, chocolates, and plated desserts.
  • Proven experience managing pastry operations in hotels, restaurants, cafés, or large-scale bakeries.
  • Strong leadership, communication, and organizational skills.
  • Knowledge of food costing, inventory management, and purchasing.
  • Thorough understanding of HACCP and food safety standards.
  • Ability to work under pressure and manage multiple priorities.
  • Immediate joiners are highly preferred.
