Job Purpose
The Head Pastry Chef is responsible for fully leading the pastry and bakery operation, ensuring exceptional quality, consistency, creativity, and full control of production standards.
The role drives excellence in dessert innovation, cost control, hygiene compliance, and team performance across all pastry operations.
Key Responsibilities
- Lead, supervise, and control all pastry and bakery operations.
- Ensure high-quality production of desserts, cakes, pastries, and bakery items with full consistency.
- Develop innovative recipes and continuously upgrade pastry menu standards.
- Maintain strong quality control across all production stages.
- Ensure timely and efficient daily production for all outlets and functions.
- Strictly control food cost, portioning, and wastage reduction.
- Maintain highest hygiene and HACCP standards in the pastry section.
- Train, supervise, and develop pastry team members at all levels.
- Manage inventory, ordering, and stock control efficiently to avoid shortages or excess.
- Ensure proper storage, labeling, and handling of all ingredients.
- Work closely with the Executive Chef for menu planning, promotions, and special events.
- Ensure full discipline, cleanliness, and organization within the pastry kitchen.
- Monitor staff performance and maintain production efficiency under pressure.
Requirements
- Strong proven experience as Head Pastry Chef / Senior Pastry Chef in large hotel or restaurant operations.
- Expert knowledge of modern and classical pastry techniques.
- Strong leadership and team management ability.
- High level of creativity and presentation skills.
- Strong cost control and operational management skills.
- Excellent knowledge of HACCP and food safety standards.
- Ability to handle high-volume production under pressure
- Pay: AED11,458.00 per month
