Head Chef – Mess / High-Volume Catering

Role overview

Responsibilities

• Plan, organize, and supervise daily food production; manage preparation and cooking of up to 15,000 meals per day while maintaining consistency and quality.
• Prepare and supervise multi-cuisine menus and recipes; ensure taste, quality, portion control, and timely meal service.
• Lead and manage chefs, cooks, kitchen helpers, and other kitchen staff.
• Maintain food storage, cleanliness, sanitation, and hygiene; ensure compliance with food-safety procedures.
• Monitor food waste and ingredient use; coordinate with procurement and stores to ensure ingredient availability.
• Maintain discipline, productivity, and smooth workflow; handle high-pressure schedules and resolve operational issues.

Requirements

• At least 2 years of experience as a Head Chef, Executive Chef, or Senior Chef in mess, industrial catering, camp catering, or large-scale food production.
• Experience handling approximately 15,000 meals per day is highly preferred.
• Strong knowledge of multi-cuisine recipes and large-volume cooking is required.
• Candidates need a good understanding of food hygiene, sanitation, and safe food handling.
• Strong leadership and team-management skills and the ability to manage large kitchen operations efficiently are required.
• Physical fitness and ability to work in a high-volume catering environment are required.
• UAE industrial or mess catering experience is preferred.

Pay

• Pay starts at AED 3,000 per month.
