Manage an industrial canteen kitchen, combining hands-on cooking with kitchen operations leadership.

Qualifications and experience
- Diploma or degree in Hotel Management, Culinary Arts, or Food Production from a recognized institution.
- 8–10 years of experience; industrial canteens, hotels, or large-scale catering experience is preferred.
- Strong cooking knowledge of Arabic, North Indian, South Indian, Chinese, and Continental cuisines.
- Proven experience in kitchen management, menu planning, inventory management, and food cost control.
- Strong leadership, organizational, and team management skills.
- Good knowledge of food safety, hygiene standards, and HACCP principles.
Key responsibilities
- Manage canteen kitchen operations, including hands-on cooking, food quality, taste, and hygiene.
- Plan daily and weekly menus to ensure variety, consistency, and quality.
- Supervise two chefs and two kitchen helpers, allocate duties, and monitor performance.
- Ensure timely preparation and service of breakfast, lunch, and dinner.
- Prepare raw-material requisitions and monitor ingredient quality, stock levels, consumption, and storage.
- Control food costs, portion sizes, inventory, and wastage.
- Maintain kitchen cleanliness, food safety, and staff discipline.
- Ensure compliance with UAE food safety regulations and company standards.
- Monitor employee food feedback and continuously improve meal quality.
