Leads pastry and bakery across Le Café LPM, LPM Restaurant & Bar, and LPM-sur-MER.
What you’ll do
- Define pastry and bakery identity for each concept, including desserts, viennoiserie, breads, cakes, grab-and-go, and celebration products.
- Protect signature desserts while leading seasonal menus and new creations.
- Set group standards for master recipes, costings, audits, and tastings across locations.
- Partner with Finance on food-cost and gross-profit targets through menu engineering and production-model choices.
- Lead the pastry workstream for openings, from kitchen design to launch day; source key ingredients and approve suppliers with Procurement.
- Coach Head Pastry Chefs worldwide and build the talent pipeline.
Experience and qualifications
- Requires 10+ years in luxury pastry and bakery, including 5+ years as an Executive or Head Pastry Chef across multiple outlets.
- Requires mastery of fine-dining desserts and bakery, including viennoiserie, sourdough, entremets, chocolate, and ice cream.
- Requires high-volume café and bakery production experience at luxury standards and experience with at least one restaurant, café, or bakery opening.
- Requires formal training such as CAP, BTM, Brevet de Maîtrise, or equivalent, and HACCP Level 3.
- Requires strong recipe standardisation and costing skills; fluent English. French or another European language is a strong plus.
- Requires readiness for frequent international travel, including extended stays for openings.
