Overview

Role Overview As Food & Beverage Manager , you will oversee all F&B operations at Basiqat Resort by Mantis , ensuring exceptional guest experiences across restaurants, bars, in-room dining, banqueting, and events.

You will be responsible for delivering consistent service excellence, driving revenue performance, and building a strong service culture aligned with the Mantis ethos.

This role requires a hands-on leader who thrives in a remote resort environment and understands how to create memorable dining experiences that reflect both place and purpose.

F&B Operations Management

  • Oversee day-to-day operations across all F&B outlets
  • Ensure consistent service standards, product quality, and guest satisfaction
  • Coordinate closely with Culinary and Front Office teams for seamless service delivery
  • Manage restaurant, bar, in-room dining, and banquet operations

Guest Experience & Service Excellence

  • Champion a culture of outstanding service and personalised guest experiences
  • Handle guest feedback, resolve issues, and ensure rapid service recovery when needed
  • Continuously enhance service delivery through training and operational refinement
  • Ensure all guest touchpoints reflect Mantis brand values

Team Leadership & Development

  • Recruit, train, and develop a high-performing F&B service team
  • Lead daily briefings, coaching sessions, and performance feedback
  • Foster a culture of accountability, teamwork, and hospitality excellence
  • Support succession planning and talent development within the department

Revenue & Commercial Performance

  • Drive outlet profitability through effective cost control and revenue optimisation
  • Support menu engineering and pricing strategies in collaboration with Culinary and Finance
  • Monitor sales performance, guest spend, and operational KPIs
  • Identify opportunities to enhance upselling and cross-selling initiatives

Cost Control & Operational Efficiency

  • Manage labour costs, scheduling, and productivity levels
  • Monitor stock control, ordering processes, and inventory management
  • Minimise waste and ensure efficient operational practices
  • Work within budget guidelines while maintaining quality standards

Health, Safety & Compliance

  • Ensure full compliance with food safety, hygiene, and HACCP standards
  • Maintain operational readiness for audits and inspections
  • Enforce safety standards across all service areas
  • Ensure adherence to local regulations and Accor policies

Collaboration & Brand Alignment

  • Work closely with Culinary, Sales & Marketing, and Events teams
  • Support the delivery of special events, activations, and bespoke guest experiences
  • Align F&B offerings with the overall resort concept and guest journey
  • Contribute to pre-opening planning and operational readiness
