The Role

As Demi Chef de Partie at Rowley's, you are the backbone of the section.

You work alongside the Chef de Partie to maintain the precision, consistency, and speed that our focused steakhouse format demands.

Every cover you touch must reflect Rowley's standard — from the perfect crust on a sous-vide Ribeye to the exact crispness of a truffle frite.

Key Responsibilitie

  • Prepare and cook all steak cuts — Striploin and Ribeye — to Rowley's exacting specifications, including our 24-hour sous-vide method with a recommended finish of medium
  • Deliver consistent results across high-volume service periods
  • Maintain all grill temperatures, resting times, and plating standards without deviation
  • Manage mise-en-place for salad components — house salad and tomato salad — ensuring freshness and proper seasoning.
  • Ensure all section prep is completed to the required standard before each service period (breakfast, lunch, and dinner).
  • Uphold HACCP and Dubai Municipality food hygiene regulations at all times.
  • Minimise waste by managing portion control and batch cookery intelligently
  • Communicate clearly with Chef de Partie and front-of-house teams during service to ensure seamless timing
