Commis I is an entry-to-mid-level kitchen role preparing, cooking, and plating dishes under the guidance of a Demi Chef de Partie or Chef de Partie.
The role focuses on recipe standards, organized kitchen sections, and consistent culinary delivery, and includes guiding lower-ranking commis chefs.
Key responsibilities
- Prepare, cook, and present dishes for a kitchen section according to recipes, portion sizes, and presentation standards.
- Set up, restock, and maintain mise en place; keep ingredients fresh, FIFO-rotated, and correctly labeled.
- Guide and assist Commis II, Commis III, and apprentices with preparation and culinary techniques.
- Maintain hygiene, sanitation, and HACCP safety standards across workstations, tools, and storage areas.
- Monitor food waste, report low stock, and store leftover ingredients properly to minimize costs.
Job requirements
- Degree or diploma in Culinary Arts, Hospitality, or equivalent professional kitchen certification.
- At least 1–2 years of hands-on commercial kitchen experience, such as in a 4- or 5-star hotel or high-volume restaurant.
- Strong knife skills and basic knowledge of classic cooking techniques.
- Ability to work well under pressure during service rushes and excellent teamwork skills.
