Role overview
The Chef de Partie joins the One&Only The Palm Hotel culinary team in Dubai.
The role oversees a designated kitchen section, maintains food quality and cost control, supervises daily operations, trains junior staff, and upholds hygiene and food-safety standards.
Kitchen duties
- Prepare, cook, and present section dishes; help create menu items, daily specials, and recipes.
- Monitor stock, order supplies, minimize waste, and maintain portion and cost controls.
- Maintain cleanliness and food-safety compliance, including HACCP procedures.
- Train and supervise Commis Chefs and kitchen assistants; coordinate with senior chefs and other sections.
- Manage mise en place and service timing; support banquets, events, and high-volume periods.
- Inspect ingredients; label, store, and rotate food using FIFO.
- Maintain temperature, cleaning, and food-usage records; care for and report issues with equipment.
- Attend kitchen briefings, resolve section issues promptly, and assist other sections when needed.
Candidate requirements
- At least 2–4 years in an upscale 5-star hotel or resort kitchen.
- Strong culinary knowledge and understanding of food preparation and kitchen operations.
- Excellent interpersonal and communication skills; able to build relationships across the kitchen brigade.
- Dynamic team player able to deliver high standards of food quality and presentation.
- English proficiency is required; knowledge of another language is highly regarded.
