Lead and manage chocolate factory operations, with responsibility for production, quality, innovation, and team performance.
Responsibilities
- Oversee daily factory operations, production workflow, capacity planning, and efficiency.
- Develop and standardize recipes for chocolates, pralines, fillings, and specialty products.
- Maintain consistent quality, taste, and presentation across production batches.
- Lead, train, and supervise pastry and production teams.
- Coordinate production with procurement and logistics.
- Maintain food safety, hygiene, and HACCP compliance.
- Control raw materials, optimize inventory, and minimize waste.
- Innovate chocolate products aligned with brand identity and market trends.
Experience and qualifications
- At least 15 years in chocolate production or high-end pastry kitchens; hotel experience is mandatory.
- At least 5 years managing a chocolate production factory; proven factory-management experience is required.
- Strong expertise in chocolate techniques, including Draje machines, production lines, tempering, molding, ganache, pralines, fillings, and decoration.
- Proven leadership experience managing large production teams.
- Strong food safety and HACCP knowledge; able to work in a high-volume, fast-paced environment.
- Strong organizational, planning, and problem-solving skills.
- Diploma required; a degree in Food Technology is required.
- Bilingual ability is mandatory; languages are not specified.
- Premium or artisanal chocolate brand experience is advantageous.
