Overview
We are looking for a creative and passionate **Sous Chef – Pastry** to lead and support our pastry operations in a premium Japanese dining environment.
The ideal candidate has a strong foundation in pastry and bakery production, an eye for presentation, and the ability to mentor and develop a team while maintaining the highest standards of quality and consistency.
Key Responsibilities
- Oversee the daily operations of the pastry section and support the Executive Chef in achieving culinary excellence.
- Prepare and supervise the production of cakes, plated desserts, breads, viennoiserie, and specialty pastries.
- Ensure consistency, quality, and presentation of all pastry items.
- Contribute to menu development and seasonal dessert offerings.
- Train, coach, and supervise pastry team members.
- Maintain food safety, sanitation, and HACCP standards.
- Manage inventory, ordering, and cost control while minimizing waste.
- Coordinate with kitchen and service teams to ensure smooth operations and timely execution.
Requirements
- Minimum **10** **years of experience in pastry production**, with at least **5 years in a Sous Chef or supervisory role**.
- Experience in upscale casual dining, premium restaurants, hotels, or fine dining establishments.
- Strong knowledge of pastry techniques, bread and viennoiserie production, plated desserts, and modern presentation.
- Experience with Japanese-inspired desserts is an advantage.
- Ability to lead and motivate a team in a fast-paced environment.
- Good understanding of food cost control and inventory management.
- Strong organizational and communication skills.
- Culinary qualifications or certifications are preferred.
- Candidates who are currently in the UAE and available for immediate joining will be given preference.
