Job Summary

The Pastry & Cake Sous Chef is responsible for assisting in managing the pastry section of the kitchen, specializing in the preparation of cakes, desserts, pastries, and baked goods.

The role ensures high standards of taste, presentation, hygiene, and consistency while supervising pastry staff and supporting menu development in accordance with Dubai Municipality food safety standards.

Pastry & Cake Preparation

  • Prepare and oversee the production of cakes, pastries, desserts, and baked items.
  • Ensure consistency in flavor, presentation, and portion sizes.
  • Create custom cakes, celebration cakes, and specialty desserts.
  • Decorate cakes using fondant, buttercream, chocolate work, and other techniques.

Kitchen Supervision

  • Supervise pastry chefs, bakers, and commis in the pastry section.
  • Ensure smooth workflow during production and service hours.
  • Train junior pastry staff on recipes, techniques, and presentation standards.

Quality Control

  • Ensure all pastries and desserts meet restaurant quality standards.
  • Monitor freshness, taste, and visual presentation of all products.
  • Maintain proper storage of pastry ingredients and finished products.

Menu Development

  • Assist the Executive Chef in developing new dessert menus.
  • Introduce seasonal pastries and innovative cake designs.
  • Standardize recipes and maintain recipe documentation.

Inventory & Cost Control

  • Monitor pastry ingredients, baking supplies, and stock levels.
  • Assist in ordering supplies and maintaining inventory.
  • Reduce waste and maintain cost efficiency.

Food Safety & Hygiene

  • Ensure compliance with **HACCP and Dubai Municipality food safety regulations**.
  • Maintain cleanliness of pastry kitchen, equipment, and storage areas.
  • Follow proper food labeling and expiry control procedures.
  • Pay: AED3,000.00 per month

Experience

  • Pastry Sous Chef: 4 years (Required)
