Role Description

This is a full-time, on-site Pastry Chef role based in Dubai.

The Pastry Chef will be responsible for preparing, baking, and finishing a variety of cookies, including developing and executing recipes that align with Mezo Cookies’ brand and quality standards.

Daily tasks include scaling and mixing doughs, portioning and shaping cookies, managing baking schedules, monitoring oven performance, and ensuring consistent product quality and presentation.

The role also involves maintaining a clean and safe work environment, adhering to food safety and hygiene standards, managing ingredient inventory, and coordinating with the team on production needs and new flavor launches.

The Pastry Chef will collaborate closely with management to support menu innovation, seasonal offerings, and efficient workflow during peak hours.

Qualifications

  • Strong foundation in Bakery and Baking, with proven experience producing high-quality cookies or similar baked goods.
  • Hands-on Food Preparation skills, including scaling ingredients, mixing, portioning, and finishing baked items.
  • Solid Cooking and Culinary Skills relevant to pastry and dessert production in a professional kitchen setting.
  • Knowledge of food safety, sanitation, and HACCP or equivalent hygiene standards.
  • Ability to work efficiently in a fast-paced, high-volume bakery environment while maintaining attention to detail.
  • Creativity and interest in developing new flavors, textures, and product concepts.
  • Strong time management, organization, and teamwork skills, with the ability to follow recipes and also take initiative when needed.
  • Previous experience as a Pastry Chef, Baker, or similar role; formal culinary or pastry training is an advantage.
  • Flexibility to work early mornings, weekends, and holidays as required by production schedules.
