Overview

Multicuisine Commis 1 is a skilled junior chef who assists senior kitchen staff.

They specialize in preparing and cooking dishes across various cuisines (such as Indian, Continental, and Tandoor) according to standardized recipes, while ensuring kitchen stations are properly stocked, highly organized, and strictly hygienic

1. Food Preparation and Cooking

Assist in preparing and cooking Indian dishes (curries, tandoori items, biryanis, naan, snacks), Continental Dishes (Pizza, Pasta) and Mexican dishes (tacos, burritos, enchiladas, quesadillas, salsas).

Follow standardized recipes and preparation methods for both cuisines.

Ensure consistency in taste, texture, and presentation.

2. Mise en Place

Prepare ingredients, chopping vegetables, marinating meats, grinding spices, preparing sauces, and setting up the workstation before service.

Maintain a clean and organized prep area throughout operations.

3. Support to Senior Chefs

Work under the guidance of the Demi Chef de Partie and Chef de Partie for daily tasks.

Assist in plating, garnishing, and completing dishes during service.

Help in training junior commis when required.

4. Hygiene and Cleanliness

Maintain high standards of hygiene in compliance with Dubai Municipality food safety regulations.

Clean and sanitize utensils, equipment, and work surfaces regularly.

Follow proper food storage practices using FIFO.

5. Ingredient Handling and Stock Monitoring

Check freshness and quality of ingredients used in Indian and Mexican cuisine.

Report low stock levels or quality issues to the supervisor.

Assist in receiving and storing deliveries correctly.

6. Food Safety and Compliance

Follow HACCP guidelines, including temperature control and safe food handling.

Prevent cross-contamination between raw and cooked items.

Use protective equipment and follow safety procedures in the kitchen.

7. Operational Support Across Stations

Assist in different kitchen sections (tandoor, curry, grill, sauté, cold kitchen, tortilla station) as needed.

Adapt quickly to the requirements of both Indian and Mexican cooking processes.

8. Quality and Portion Control

Ensure ingredients are prepared according to standard portion sizes.

Maintain consistency in presentation and flavor across all dishes.

9. Waste Reduction

Use ingredients efficiently to reduce wastage.

Follow proper storage and labeling to avoid spoilage

Pay: AED1,600.00 - AED1,800.00 per month
