Seeking an experienced Sushi Chef skilled in sushi preparation, Japanese cuisine, and kitchen operations.
The role involves seafood handling, high-quality food presentation, and leading a chef team in a fast-paced kitchen.
Responsibilities
- Prepare sushi, sashimi, nigiri, maki rolls, and other Japanese dishes; handle, fillet, cut, and store fish and seafood.
- Maintain food handling, hygiene, sanitation, food safety, quality, portion control, taste, and presentation standards.
- Lead kitchen staff, delegate tasks, manage workflow, and ensure timely service during peak periods.
- Monitor ingredient freshness and inventory, minimize wastage, and maintain temperature control and safe storage of perishables.
- Develop sushi recipes and menu items as required; train and mentor junior chefs.
- Coordinate with the Head Chef and kitchen team and ensure compliance with company standards, HACCP, and food safety regulations.
Requirements and qualifications
- Proven Sushi Chef experience in a restaurant, hotel, or high-volume food-service establishment.
- Strong knowledge of sushi techniques, Japanese cuisine, seafood handling, fish filleting, and precision knife skills.
- Previous experience leading and managing chefs; understanding of food safety, hygiene, HACCP, and seafood storage.
- Able to work under pressure while maintaining quality and consistency; strong leadership, communication, organization, and time-management skills.
- Creativity, attention to detail, and flexibility to work shifts, weekends, and public holidays.
- High-end restaurant, luxury hotel, or premium Japanese dining experience is preferred.
- Menu development, ingredient costing, kitchen inventory, and staff development experience are preferred.
Pay
- QAR 4,000–6,000 per month.
