Job Description
We invite you to join the world of luxury hospitality at Raffles & Fairmont Doha as our new Demi Chef de Partie.
As a Demi Chef de Partie at Raffles Doha and Fairmont Doha, you will be responsible for supporting the culinary team in delivering exceptional dining experiences that reflect the elegance, precision, and service excellence of both luxury brands.
Working under the guidance of the Chef de Partie and senior culinary leadership, you will assist in the preparation, production, and presentation of high-quality dishes, ensuring consistency, creativity, and adherence to the highest standards of taste and presentation.
You will play an integral role in maintaining seamless kitchen operations by upholding strict hygiene and safety standards, efficiently managing mise en place, and ensuring timely execution during service.
With a strong attention to detail and passion for culinary craftsmanship, you will contribute to creating memorable gastronomic experiences that embody the refined artistry of Raffles and the contemporary sophistication of Fairmont.
In every task, you will represent the commitment of both brands to excellence, precision, and heartfelt hospitality.
Key Responsibilities
- Assist in the preparation, cooking, and presentation of high-quality dishes in line with Raffles & Fairmont luxury culinary standards.
- Support the Chef de Partie in ensuring smooth kitchen operations across assigned sections with consistency and efficiency.
- Prepare mise en place accurately and efficiently to support timely and flawless service delivery.
- Maintain a strong understanding of menu items, recipes, ingredients, and presentation standards across outlets.
- Ensure all dishes are produced in accordance with brand specifications, portion control, and presentation guidelines.
- Coordinate closely with kitchen brigade members and other departments to ensure seamless service execution.
- Support menu development and contribute creative input where required, reflecting the culinary identity of Raffles & Fairmont Doha.
- Maintain the highest standards of food hygiene, sanitation, and safety in compliance with HACCP and hotel policies.
- Monitor stock levels within the section and assist in requisitioning and minimizing wastage.
- Ensure proper storage, labeling, and handling of all food products in line with operational standards.
- Respond to service demands efficiently, ensuring quality and consistency under pressure during peak periods.
- Uphold confidentiality of recipes, standards, and operational procedures in line with brand requirements.
- Support training of commis chefs and kitchen associates as directed by senior culinary leadership.
- Contribute to a positive, disciplined, and collaborative kitchen culture that reflects the elegance, precision, and excellence of Raffles & Fairmont Doha.
Qualifications
- What will you bring to this role?
- Previous experience as a Commis Chef or Demi Chef de Partie in a luxury hotel or fine dining environment preferred.
- Culinary qualification or professional certification from a recognized culinary institute is an advantage.
- Strong knowledge of cooking techniques, food preparation, presentation standards, and kitchen operations.
- Excellent understanding of hygiene, sanitation, and food safety standards (HACCP certification preferred).
- Strong communication skills with the ability to follow instructions clearly and work effectively within a diverse kitchen brigade.
- Demonstrated passion for culinary excellence, creativity, and attention to detail in food preparation and presentation.
- Ability to work efficiently under pressure in a fast-paced, high-volume luxury hotel kitchen environment.
- Strong organizational skills with the ability to multitask and manage assigned section responsibilities effectively.
- Basic knowledge of inventory control, stock rotation, and minimizing food wastage.
- Team-oriented mindset with the ability to collaborate closely with chefs and support operational excellence.
- Physically fit and able to work long hours, including standing for extended periods.
- Flexibility to work rotating shifts, split shifts, weekends, and public holidays as required by operational demands.
