Position
Commis I / Demi Chef in Food Production – Hot & Cold Kitchen.
Food preparation and service
- Prepare, cook, and present dishes to standard recipes and hotel quality standards.
- Complete mise en place and prepare ingredients before service.
- Prepare soups, sauces, vegetables, meat, poultry, seafood, salads, sandwiches, dressings, cold appetizers, and garnishes.
- Assist with restaurant, buffet, à la carte, and banquet preparation and service.
Kitchen operations
- Guide junior staff when required and assist with training in food preparation, kitchen procedures, hygiene, and safety.
- Check ingredient quality and freshness; report substandard products to the senior chef.
- Monitor stock, prepare requisitions, and report shortages to the Chef de Partie.
- Limit waste and control costs through standard portions and proper storage.
- Coordinate with kitchen sections and prepare the section for the next shift.
Standards and procedures
- Maintain food quality, taste, freshness, portion control, and presentation.
- Follow food safety, personal hygiene, sanitation, and HACCP procedures.
- Use proper storage, labeling, date marking, temperature monitoring, and FIFO procedures.
- Keep workstations, refrigerators, equipment, and utensils clean and organized.
- Operate equipment safely and report malfunctions or maintenance needs.
- Maintain teamwork and professional conduct; follow directions from the Chef de Partie and Sous Chef.
Pay
- Pay starts at AED 2,500 per month.
